If you want the pancakes to turn out fluffy and can spend a few extra minutes, then cook them a little differently, separating the whites from the yolks. Mix the yolks with the psyllium as described in the preparation method, and place the whites in a separate bowl and beat. Then, carefully pour the whipped egg whites into the dough so that they don't settle.

The pancakes are best served when they have cooled down. You can also take them with you to work!

When serving the pancakes, you can replace the berries and cream with raspberry jam, butter cream, or peanut butter.

Proper storage and heating

The fresh pancakes you just removed from the pan are the best. They can also be stored in the refrigerator for 2-3 days and in the freezer for up to 3 months.

If you are going to stack them on top of each other, place pieces of parchment paper between them to keep them from sticking together.

The best way to reheat the pancakes is to melt the butter in a frying pan and put the pancakes in it. Heat them over medium heat for 30 seconds on each side.
